I always hear about needing to be 'Size 0' to model but I don't really understand what that means. I am a size 10/12 – am I too fat to model?

Size 0 is just a bit of lazy journalism. It is an American dress size that corresponds to a UK size 4. Size and fat are not the same thing. You can be size 16 and still be honed, in proportion for your body and absolutely gorgeous.
